Monk fish or "Ankou", are deep sea fish that reach about 1 m in length. They are soft and flat, with a big head and a big mouth with strong teeth. They are not good at swimming, so they usually hide out in the sand whilst moving the thorns on their head to lure small fish. High in protein and low in calories, with a refreshing taste. They have an abundance of collagen in their skin, and their livers are very nutritious. The main season for dishes with Monkfish, especially hot pot, is the winter.

The patches can be ironed on cotton and polyester materials. Use a damp cloth under the iron when ironing, and be extra careful if you are ironing on heat-sensitive materials. Machine-stitching is recommended to enhance strength.
