WHITE MISO & TAMARI

WHITE is the exclusive set of barley miso from Ii Shoten (Uwajima city, Ehime) and Shirotamari from Nitto Brewery (Hekinan city, Aichi).

As you see in the image, they both have much lighter color than common miso and soy sauce.

Curious, no? They are even uncommon in most parts of Japan as neither of these products use soybeans at all in production while the standard miso and soy sauce do. At Ii Shoten, naked barley is kojified (incubated with koji mold) then mixed with salt to make their barley miso.

At Nitto Brewery, wheat is kojified then mixed in the brine to make Shirotamari.

Both products go through the slow process of natural fermentation and do not include any additives or preservatives. They are not even sterilized. The light color is achieved not only due to the fact that it's made without soy, but to the specific way of making koji, adjusting the fermentation and maturing period, and the balance in salt ratio. The soy, the heat and the time are what makes the color darkened. Bringing Umami out without protein rich soy is also considered a big challenge.
