Bonito "katsuo" is a big, spindle-shaped fish that exceeds 1 m in length. They are fast swimmers and migrate in large groups. Bonito are rich in mineral, iron, and zinc. The first Seared Bonito that are caught in the early summer are a delicacy that inspired a famous Haiku poem.
