Olive Flounders or "hirame" are flatfish of about 80 cm in length, with eyes on one side of the body. During the daytime they hide in sands on the seafloor with only their eyes poking out, and at night they swim actively to eat squids and crustaceans. Because it grows up quickly in captivity, it is suitable for farming. Considered a delicacy, the best season to enjoy this fish is from fall to winter. Common as sashimi, sushi, as meunière and fried.
