Also called the "Baka clam" (idiot clam), because it sticks out its orange tongue from its shell. Rub the shellfish with salt and boil to make sushi. Aoyagi is the name of the place where these round clams used to be harvested. Best enjoyed during the winter or spring seasons!
People used to ferment fish with rice for preservation before Edo style sushi appeared around 1716.
