Patch Ika (Golden Cuttlefish): Characteristic crispy and sweet cuttlefish is a sign of fall. Bluish and white. A summer seafood delicacy, small cuttlefish available in August are as popular as Shinko (small Gizzard Shad). People used to ferment fish with rice for preservation before Edo style sushi appeared around 1716.

Patch Ama-Ebi (Sweet Shrimp): Sweet when eating them raw. Bright body colour with fresh and juicy taste.
The best season for Northern shrimp (Pandalidae) is fall through winter in which the temperature of seawater drops. People used to ferment fish with rice for preservation before Edo style sushi appeared around 1716.

Patch Buri (Yellow Tail)Winter is best as "Winter Buri" is tasty. Called by different names as they grow. Best eaten in December. They are called in many names like "Inada", "Hamachi" and "Tsubasu". Patch Anago (Conger Eel): A typical Edo style sushi. Slit it open to simmer. Put salty-sweet sauce on top. Saltwater fish very similar to eels. Conger myriaster in the family of conger eels is consumed for food. Best in summer when they are less fatty. People used to ferment fish with rice for preservation before Edo style sushi appeared around 1716.
