Saury "san-ma" are thin and flatfish of about 35 cm long. They have beak-shaped jaws, shiny scales, and can be found in the waters around Japan where they swim in large groups. People enjoy it grilled with salt especially in autumn, but it is also gets broiled in a soy-based sauce and used for "Kabayaki".
