GENKI SOBA juwari soba buckwheat noodle (dry, unsalted)

What a surprise, even “sobayu” (the water that boiled the noodle) tastes good, unadulterated. While it is common to use wheat flour as a binder for soba production, Hara Farm uses only buckwheat flour made from 100% organic buckwheat he cropped. As it is salt-free, there is really only one ingredient: buckwheat flour. 

When boiled, you will be surprised at the difference. Sobayu is creamy and thick. You can even enjoy it as it is, or season with a little salt, add other ingredients and make it into a soup, or add a dash of Nitto Brewing's Shiro-tamari. The fact that the sobayu is so tasty also proves that the soba noodles themselves are of excellent quality.

After five minutes of gentle boiling in plenty of water, turn off the fire and let it sit for one minute before serving. The characteristic smooth textures and nourishing flavour of the dried juwari soba are all pleasant. Even though it is made from juwari buckwheat noodles, it has a smooth texture and yet a deep taste. I have never had soba like this before. The buckwheat is processed into dry noodle in Nagano, famous for its Shinshu soba.

GENKI SOBA, organic juwari soba noodle made of 100% buckwheat by Hara Farms

The only raw material used is organic buckwheat flour. Hara Farm, which produces the buckwheat, does not use pesticides or chemical fertilisers and cultivates the soil by sowing a mixture of clover, aiming for environmentally friendly, recycling-oriented agriculture.

The farm is located in the town of Shintoku in Hokkaido, a place with a rich natural environment where the Daisetsu Mountains and the Hidaka Mountains meet. In such a location, Hara harvests and dries buckwheat all by himself, and produces 'GENKI SOBA', processed from his buckwheat seeds.

原氣蕎麦 十割乾麺(無塩)

なんと、そば湯まで美味しいという、混じりっけなしの、100%オーガニックそば粉でできた十割そば。無塩なので、材料は本当にそば粉一つしかありません。

茹でると、その違いに皆さん驚かれると思います。茹で汁はクリーミーで濃厚。そのまま楽しんでも、少しだけ塩を振っても、具材を追加してスープにしても、日東醸造のしろたまりをひとたらししても、とても美味しいです。蕎麦湯がここまで美味しいということは、蕎麦の麺自体がかなり美味しいことの証明でもあります。

グラグラ煮立った、タップリのお湯の中で5分優しく茹でたら、1分蒸らして出来上がり。十割蕎麦の乾麺ならではの歯ざわりと、滋味、なめらかな舌あたり、すべてが心地よいです。

十割なのに、ツルツルとした口当たり、それでいて奥深い味。こんなおそばは初めてです。

はら農場の十割そば「原氣蕎麦」

原材料は蕎麦粉のみの十割蕎麦です。このそば粉の原材料となるそばの実を生産するはら農場さんは、環境に配慮した循環型の農業を目指して、農薬や化学肥料を使用せず、クローバーを混播して土作りをされています。

農場のある新得町は、大雪の山々と日高山脈の交わる自然環境豊かな場所。そんな場所で、原さんはそばの収穫、乾燥調整を一人で行い、とれたそばの実を加工した「原氣蕎麦」を生産しています。
