To make this sushi, the red meat of the tuna is wrapped in dried sea weed with vinegared rice. Called "Iron on fire" in Japanese because it resembles red-hot iron bars. It used to be made of leftovers after the lean flesh of the tuna was cut out for sushi.

People used to ferment fish with rice for preservation before Edo style sushi appeared around 1716.
