Marlin or "kajiki-maguro" are large fish that reach up to 4 m in length. They are called "Kaji ki toshi"(wood plate piercing) in Japanese because their upper jaws are long, sharp and strong enough to pierce hard wooden plates. They are fast swimmers that can swim up to 100 km per hour. The flesh is similar to tuna but whiter. Eaten as teriyaki, sauteed, or fried. However, fresh marlin is often eaten raw.
