Horse Mackerels or "Ma-aji" have scute-like scales rising up from its sides. They are saltwater fish of about 35 - 40 cm in length, that prefer living on sandy sea floors. The "Aji" in its Japanese name means taste. As such, it is a tasty fish that is low in fat but has a high protein level and an abundance of amino acids.
Japanese pilchard "Iwashi" are smaller fish of about 25 cm long that have shiny silver bellies and black stars on their sides. They are even called baby Anchovy when they are small. Like most sardines, freshness is vital as they go bad quickly. Fried and dried sardines are very popular in Japan.
