A shiny fish that has a beautiful contrast between the white, fatty layer and the red meat. Served with grated ginger and spring onions. Freshness is important as the fish meat gets oxidized to change color. Best enjoyed in summer!

The patches can be ironed on cotton and polyester materials. Use a damp cloth under the iron when ironing, and be extra careful if you are ironing on heat-sensitive materials. Machine-stitching is recommended to enhance strength.
