Iburigakko – Makoto Nosan (Smoked and pickled daikon radish)
Those are traditional smoked pickled daikon from Akita. Fresh daikon are smoked over a wood fire for a few days and then pickled for over 100 days in rice bran, salt and sugar. The sliced Iburigakko by Makoto Nosan is additionally marinated in beer.

Smokey, rich, slightly sweet with deep umami. Has nice crunchy texture and goes great with cream cheese. All vegetable materials but the deep smoked flavour tastes like smoked meat.
